RECIPE:

3 cups frozen strawberries
2 cups full fat coconut milk
2/3 cup maple syrup (or another sweetener)
2 tsp vanilla extract

Coating:

1 cup vanilla sandwich cookies
1/2 cup freeze fried strawberries

Add the frozen strawberries, coconut milk, maple syrup and vanilla extract to a blender and blend until smooth.

Pour into popsicle molds and freeze until set (~4-6 hours). Meanwhile, pulse together cookies and freeze dried strawberries until they form a fine crumb mixture.

Run the popsicle molds under warm water to release, then coat both sides of the popsicle in the cookie mixture. Return to freezer until ready to enjoy.
