• 🥔 3 potatoes
• 🧅 1 onion
• 🧄 1/2 tsp garlic powder
• 🌶️ 1/2 tsp paprika
• 🍄 2 1/2 cups mushrooms
• 🌿 1/3 cup chopped parsley
• 🌾 3 tbsp chickpea flour
• 🥥 1 cup coconut plant-based milk
• 🧂 1/4 tsp salt
• 🌿 1/2 tsp oregano
• 🌶️ 1/2 tsp black pepper
• 🧀 Vegan parmesan cheese or preferred vegan cheese
• 🍅 Bell pepper and mushrooms for garnish
Instructions:
1. Peel and slice the potatoes, wash them, and cook them for 10 minutes. Remove them from the water and let them cool slightly. (Don’t overcook, as the slices might break.)
2. Heat the onion in 3 tbsp of olive oil and sauté well with garlic powder, paprika, oregano, and black pepper.
3. Chop the mushrooms, sauté them, and add the chopped parsley.
4. In a pan, heat the chickpea flour until it’s no longer raw. Gradually add coconut plant-based milk until the sauce thickens.
5. Add salt, garlic powder, and black pepper to the sauce and mix well.
6. In an oven-safe dish, spray the bottom with oil and layer the potatoes, mushrooms, and the sauce on top.
7. Top with vegan parmesan cheese or your preferred vegan cheese and decorate with bell pepper and mushrooms.
8. Bake in the oven at 200°C (390°F) for 30 minutes, until golden brown on top.
