Mutton vindaloo
Ingredients:
Mutton 500g
Oil 2 tbsp
Bay leaf 1
Garlic and garlic paste 2 tbsp
Onion 2 large (chopped)
Tomato puree 1/2 cup
Chilly powder 1 tbsp
Cumin powder 1 tsp
Turmeric powder ½ tsp
Cardamom powder ¼ tsp
Pepper powder ½ tsp
Garam masala 1 tsp
White vinegar 2 tbsp
Fresh coriander leaves chopped
Water (as required)
Salt to taste
Potato1 large (Optional)
Sugar 1 tbsp (Optional)
Method:
Heat oil in a large pan. Fry the potatoes for about 2 mins and remove.
In the same pan add bay leaf & stir. Add chopped onion and cook for a min.
Add ginger and garlic paste. Sauté for a minute. Then add cumin powder, turmeric powder, cardamom powder, pepper powder
Garam masala, chilly powder and sugar, stir for few seconds.
Add the tomato puree, mix and cook for a minute. Now add the mutton and Mix. Add the salt, water and white vinegar.
Add the fried potato mix well.
Cook on low heat for 25 to 35 minutes or cook until the mutton is tender.
Garnish with some fresh coriander.
