Gravy Noodles - Also called Cantonese Style noodles in many places - is a perfect combination of chowmein and mild but flavourful gravy! ✨
Note: Adjust the consistency of the gravy as per your taste. ❤️
-----Ingredients-----
For broth:
- 1 cup chicken (with bones)/ mushrooms
- 1.5 cup vegetables mixed (1 onion , carrot , beans , cabbage capsicum, spring onions)
- 1 inch Ginger- juliennes
- 6-7 garlic cloves - lightly crushed
- 2 tbsp oil
- 1 star anise
- 10 black peppercorns
- 4.5 cups water
- 2 tsp salt
For boiling noodles:
- 200gm noodles
- 1 L water for boiling
- 1 tbsp salt
- 1 tbsp cooking oil
For gravy:
- 1 tbsp oil
- 1/2 cup cubed chicken / sliced mushrooms
- 1 onion - diced
- 1/4 cup of each veggie cut in large chunks - carrots , beans , cabbage, capsicum, spinach
- 1 tbsp chopped garlic
- 1 tsp chopped ginger
- 2 cups of broth
- Salt as per taste
- 1/4 tsp soy sauce (optional)
- black pepper 1/4th tsp
- a pinch of MSG (optional)
- For slurry: 2 tbsp cornflour (Add extra 1 tbsp extra for thick gravy)+ 1/4 cup of water used for boiling the chow
- Spring onions for garnish
