This is a beautiful easy and quick homemade SWEET POTATO CAKE smothered with CREAM CHEESE FROSTING all from scratch. Everybody loves it. You can serve it warm or room temperature!! You can freeze it too! It’s just delicious.

Here’s the recipe:
1 small or large can of Sweet Potato Yams (drained)
2 cups Self rising flour
2 cups sugar
1 Tsp. Cinnamon
1/2 cup oil
4 eggs, beaten
1/2 cup pecans (optional)
Drain potatoes and mash. Combine all Ingredients. Mix well. Pour into greased pan. Bake in 13 x 9 inch pan at 325 preheated oven for 30-40 minutes. Cool cake before frosting.
Frosting:
1 Stick Margarine
Block of cream cheese
1 box Powdered Sugar
2 tsp. Vanilla flavoring
1/2 cup nuts (optional)
Melt cream cheese & butter. Slowly add powdered sugar. Add vanilla And nuts. Mix well.
This cake unbelievably delicious.
