HOW WE MAKE KÄSESPÄTZLE (CHEESE SPÄTZLE): BEST GERMAN FOOD & REGIONAL DISH// Happy Friday, Today we're sharing a wonderful German recipe: Käsespätzle (Cheese Spätzle) which is very popular in the South of Germany. Auf Deutsch, ein einfaches Käsesspätzlerezept! As Joerg is from the South, he is obsessed with Spätzle so this was the first time, we tried them and we can tell you: Homemade Spätzle are so easy to prepare and so yummy! A taste of home! We love to share great German recipes and hope you like it as well! Käsespätzle are a little bit like Mac and Cheese here in the UK (though Spätzle taste different than macaroni and the cheese you use for it is different as well), try it! Kirsten & Joerg xx

RECIPE KÄSESPÄTZLE (CHEESE SPÄTZLE):
Ingredients
For the Spätzle dough:
500g plain white flour
6 eggs
about 150ml water
1 tsp salt
You will also need:
butter
300g grated cheese (alpine cheese is great)
3-4 onions
sugar
pepper
chives
Method
Mix together the flour, eggs, water and salt using a wooden spoon or a machine. Mix until you see bubbles coming up.
Let the dough rest for some minutes.
Preheat the oven to 120 degrees Celsius (248 Fahrenheit) and butter an ovenproof pan or a casserole.
Bring a pot of water to the boil and add some salt. Once the water is boiling, use your Spätzle device. The Spätzle only need a short time (about 1 minute); they will be done as soon as they rise to the surface. Drain the Spätzle.
Slice the onions (rings). Melt some butter in a pan und fry the onions on low heat and add a bit of sugar. Fry until the onions have a brown colour and are wonderfully crispy.
Cover your pan or casserole with some Spätzle and grate some cheese over it.
Add another layer of Spätzle and grate some more cheese over it. Finally put the onions on top of it.
Bake in the oven for about 35 minutes.
Season with some pepper and garnish with chives. You can also serve it with a salad and enjoy a cold beer with it or some white wine.
