FULL RECIPE:
1 lb. shrimp deveined with shells removed
½ cup of mayo
¼ cup of Thai sweet chili sauce
¼ cup of sriracha (or to your liking)
1 cup of cornstarch
1 cup of buttermilk (optional)
Canola or similar high smoke point oil (for frying)
Mix together mayo, sriracha, and chili sauce in a large bowl.
Coat shrimp in buttermilk if you have it and coat in cornstarch. (buttermilk will assist in the
adherence of the cornstarch, to give a bigger crunch)
Once coated in cornstarch, fry until golden, put fried shrimp on a paper toweled surface, let the
towel absorb the excess oil. Toss the shrimp in the sauce mixture. To get the maximum crunch
you will want to serve right away once the shrimp is fried.
