Ingredients:
Oil 3 tbsp
Onion (chopped) 1 cup
Cinnamon stick 1
Cloves 4-6
Black peppercorns 10-12
Green cardamom 2-3
Bay leaf 2
Cumin seeds 1 tsp
Chicken legs 2-3
Ginger garlic paste 1 tbsp
Tomato puree 1/2 cup
Tomato paste 1 tbsp
Lemon zest 1 tsp
Salt 2 ½ tsp / to taste
Coriander powder 1/2 tbsp
White pepper powder 1/2 tbsp
Garam masala powder 1/2 tbsp
Water 4 cups
Green chilies 2-3
Guard Basmati Rice 2 cups
Water (for soaking) as required
Oil (for grilling) as required
Ingredients for Roasted Nuts:
Oil 2 tbsp
Almonds 1/4 cup
Cashew nuts 1/4 cup
Raisins 1/4 cup
Directions:
1. In a bowl add water and add rice. Soak for 25-30 minutes.
2. In a pot heat oil and add onion. Saute onion until translucent.
3. Now add cinnamon stick, cloves, black peppercorns, green cardamom, bay leaf, cumin seeds and cook for 2 minutes.
4. Now add chicken and cook until changes color. Now add ginger garlic paste and cook for 2-3 minutes.
5. Add tomato puree, tomato paste, lemon zest, salt, coriander powder, white pepper powder, garam masala powder and cook until water dries out.
6. Now add water and bring it to boil. cover and let cook for 10-15 minutes.
7. Now take off lid, separate chicken from broth and keep the chicken aside.
8. Add soaked rice in broth and cook until 80% water dries out.
9. Heat oil in another pan, add almonds, cashew nuts, raisins and saute for a minute.
10. In another pan heat oil and add chicken, grill on medium high flame just enough to get nice golden brown crust on chicken.
11. Now spread a layer of chicken on rice being cooked, top it with roasted nuts.
12. Cover with lid and steam for 10-15 minutes.
13. Your Chicken Kabsa Biryani is ready to serve and enjoy.
