Water Bath Canning, 2 tubs, 24 - 64oz Jars!

Total Prep time took 2 hours for 1 person to wash all cans, lids and add the fruits and sugar.

TOTAL TIME OVER THE FIRE COOKING WAS 2 HOURS AND 15MINS

TOOK 15MINS TO SEAL ALL LIDS

HERE ARE THE STEPS FOR THE WATER BATH CANNING:

1.Have your cans prepared and ready to go (fruits and sugar, add the water when the cars are in the tub already)
2. Have your Blocks ready for tub support
3. Add the fire wood (we used dry branches,paper and fluid to start it)
4. Put the Empty Tub over the blocks
5. Add the charcoal grill rack on the bottom of the tub
5. Now arrange your cans in the tub (12 in each tub)
6. Add the water to the cans
7. Lids on slightly tight
8. Add the water in the tub, fill up to the jar rings
9. Start the fire and keep the fire going till the end
10. In 1 hour you will see the water in the tub about to start boiling

HOW TO KNOW THE JUICE IS READY:
After 2 hours the cans being over fire, you will notice the fruits discoloring and water inside the jars turning pink/red and small air bubbles going up inside the jars means it's boiling inside the jars and juice is ready. (this took 2 hrs 15mins)

To take out, now its Important you tighten the lids with rings on good before lifting out the jars out of the tub, be careful, it's very HOT!

Have a table nearby ready, tight the rings on again, shake the jars good, sugar gets on the bottom and needs to be released to dissolve. Use hand Towels, very HOT! Handle with care.

We put the cans in a box, towels underneath and on top to cover them well overnight. Next day they are ready to store in your pantry.

***This is our family method of water bath canning. It has been in our generations for years. We do juice, pickles, tomatoes, beans, tomatoes juices, etc this style. It works great and no cans exploding or rottening with time. They stay for years in basement/pantry.
