*for a 25 x 11 cm baking tin
● Batter
1 ⅔ stick of softened butter (180g)
1 ⅔ cup (200g) powdered sugar
pinch of salt
1 tbsp (15g) honey
four large eggs (250g)
2 ⅓ cups (240g) pastry flour
⅔ tsp (3g) baking powder
1 tbsp (15g) cocoa powder
1 ½ tbsp (25g) dark chocolate chips
extra butter
● Chocolate Glaze
2 cups (375g) milk chocolate
3 ½ tbsp (50g) sunflower oil
½ cup (50g) ground walnuts
● Steps:
1. Preheat the oven to 400°F (200°C).
2. Sift powdered sugar. In the bowl of a mixer, mix butter, powdered sugar and salt. Cream until softened. Add the honey. Scrape the sides of the bowl before adding the eggs. Start adding eggs, gradually. Continue with the sifted flour & baking powder and let it mix.
3. Make a paper cone and fill it with softened butter.
4. Once the batter is ready, remove one third of it and add cocoa powder and melted chocolate.
5. Pour the two batters in two separate pastry bags. Pipe them alternatively into the baking tin as shown in the video. Use a knife and mix in several spiral movements. Pipe the butter in the paper cone in the middle of the cake.
6. Bake at 400°F (200°C) for 15 minutes. Lower the temperature to 325°F (160°C) and bake for 30-35 minutes. Do not open the oven in the first 30 minutes. It’s done when the skewer comes out clean.
7. Melt chocolate and mix it with sunflower oil. Blend with a handmixer until combined. Use your glaze at 95-100.5 °F (35-38°C). Pour it all over the top, making sure the entire cake is covered.
● Tips:
1. When making the batter, scrape the sides and bottom from time to time and make sure the entire amount of butter is well incorporated.
2. Grease your baking tin with cooking spray or butter and line it with parchment paper.
