Ingredients:
For the Crust:
3 1/2 cups all purpose flour
1/2 tsp salt
1 tbsp sugar
3/4 cup cold butter
1 medium egg
1 cup cold water
Filling:
1 cup sugar
3/4 cup cornstarch
1/4 cup all purpose flour
1/4 tsp salt
1 cup coconut water
2 medium eggs
1 tsp vanilla
1 cup evaporated milk
1kg fresh young coconut meat
2 tbsp butter
1 beaten egg for brushing
*Bake in a preheated oven at 170°C for 45-50 minutes placed in the middle rack.
