Karela or bitter gourd is considered to be the most bitter of all fruits and vegetables, so this recipe might not be everyone's favourite. But karela / bitter gourd contains a lot of good nutrients, so please do try it! And this recipe definitely makes it a lot tastier!
Ingredients required:
350gr karela whole
1 teaspoon salt (to use with the karela pre-cooking)
3 tablespoons oil (for making the filling mixture)
1/2 teaspoon cumin seeds
200gr onions, minced
1 teaspoon garlic, ginger, chilli paste
2 teaspoons dhana jeeru
1/8 teaspoon garam masala
1/2 teaspoon salt
1/8 teaspoon red chilli powder
1/4 teaspoon turmeric
3 teaspoons anardana powder (pomengranate powder)
1/2 teaspoon sugar
100gr potatoes, peeled and chopped
3 tablespoons oil (for frying the karela)
