Spice things up with these tandoori chicken burgers! A great Indian twist on the standard hamburger.
Ingredients
Boneless chicken thigh (2 for each bun).
You can even use chicken breast
Oil 1 tablespoon
Green chutney 2 tablespoons
Chat masala to taste
Salt to taste
Baby spinach leaves a few
Onion cut in round thick roundels
tomatoes cut in round thick roundels
Burger bun
For chicken marination:
2 tbsp. Tandoori masala (Used store bought one)
1 tbsp. ginger-garlic-green chili paste
2 tbsp. lemon juice
Plain Yogurt 1 tbsp. (Hanged in a cheese cloth for 1 hour)
1.5 tbsp. roasted chickpea flour (besan)
Fenugreek leaves/ kasoori methi
Vegetable oil/Mustard oil 1 tablespoon
Method:
Place chicken thigh in a bowl, add salt, tandoori masala, oil, roasted chickpea flour, ginger garlic chili paste, yogurt and 2 tbsp. lemon juice, kasoori methi and mix well.
Set aside in a refrigerator to marinate for minimum 30 minutes to overnight.
Cook chicken pieces on the pan, drizzle a little oil and cook till the chicken is cooked and golden. You can bake or grill the chicken pieces.
Halve the burger buns horizontally. Cut onion and tomatoes into thick roundels. Add green chutney over all the burger halves. then add onion slices.
Lightly toast buns in the oil to soak up all flavors
Arrange the chicken tandoori over the onion and tomatoes.
Tear a few spinach leaves and place over the top halves.
Cover with the top halves of the burgers and press lightly. Serve immediately.
Green chutney:
2 cups Cilantro leaves, hard stems removed, washed and roughly chopped
1 cup Mint leaves, stems removed, washed
4 Green Chili
1" inch Ginger or 1 tablespoon grated
3 cloves Garlic
Salt to taste
1 tbsp. Sugar optional, adjust to taste
1 tbsp. Lime juice
½ cup Water
Mix all ingredients in a blender and store in airtight container.
