Bati Chokha is the street food of uttar pradesh !
I happened to try this classic (Banaras Food)  Varanasi Street Food at Bati Chokha restaurant and I was amazed by its simple yet enriching flavours !

This bati chokha was very different from dal bati of Rajasthan and Litti chokha of Jharkhand.

Bati is cooked using cow dung cakes, dal is made in earthen pots, sattu is freshly made using stone grinder.

Apart from food a dip in the holy water of Ganga / Ganga snan at dashashwamedh ghat and visiting Vishwanath temple is highly auspicious.

This video showcases the traditional Food and cooking style of Varanasi.

If one happens to visit Varanasi, Bati Chokha is a must try !

So here is what I had :-

MATTHA
Buttermilk served in an earthen glass / kullhad with a tempring of spices.

PHARA
A deep fried fritter made with lentil and wheat flour, tasted delicious with coriander chutney.

DAL PAKORA
Urad dal pakoras, hot and crispy !

PANEER PAKORA
Cottege cheese pakoras made with a coating of papad, tasted absolutely delicious.

DAL
Arhar dal made in a earthen pot vessel over chulah, tempered with onion, green chillies and tomatoes.

PANEER BATI
Whole wheat dough balls stuffed with crushed paneer, cooked in cow dung ash. Drizzled with desi ghee.

SATTU BATI
Whole wheat dough balls stuffed with gram flour mixture, cooked in cow dung ash. Drizzled with desi ghee.

CHOKHA
Brinjal baingan / roasted on grill then crushed and tempered with onion, tomatoes, chillies, garlic and mustard oil.

RICE
Simple steamed rice, goes well with dal and desi ghee.

Accompaniments :-
- GHEE
- ONIONS
- FRESH CORIANDER CHUTNEY
- ROASTED TOMATO CHUTNEY
- FRIED GREEN CHILLIES

The food was served on a pattal and earthen pot cutlery. I absolutely loved the food !
