Throw away the box mix pancakes.Get ready to make these easy and delicious pumpkin pancakes. Perfect for breakfast, brunch or even your kids school lunches. Serve with your favorite maple syrup. I just know you are gonna love these pancakes.
Ingredients
1 cup all purpose flour
3 tbsp brown sugar
2 tbsp sugar
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
¼ tsp salt
⅔ cup milk (room temperature preferred)
⅔ pumpkin puree
1 large( room temperature preferred)
1 tsp vanilla extract
2 tbsp melted butter cooled
Directions
In a large bowl whisk together flour, brown sugar, sugar, baking powder, baking soda, cinnamon, pumpkin pie spice and salt, set aside.
In another bowl whisk together milk, pumpkin puree, egg and vanilla together. Add melted butter and whisk together until combined.
Add wet ingredients to dry ingredients, mix until just combined. Set aside
Heat skillet/griddle on low/medium heat. Add some butter. Once butter is melted, use a scoop to scoop batter onto the griddle. Once you start to see bubbles flip pancakes over and cook for another 2 minutes.
Serve with butter and maple syrup.
