The Jar of Destiny delivers this week from category 32A, Classic Style Smoked Beer.
John drew his inspiration for this recipe from the iconic Alaskan Smoked Porter, widely regarded as the gold standard of American smoked beers. Taking this inspiration to heart, John went all-in, smoking his own malt with Alderwood using a homemade smoker rig crafted from clay pots and a hot plate.
The resulting beer featured a subtle but noticeable smokiness. While the overall smoke intensity might be considered mild for the style, we both loved the effect. The base porter showcased stunning mahogany hues hidden within its deep, dark brown color. Flavor-wise, it offered a delicate balance of caramel malt sweetness and roasted character that felt just right.
Interestingly, the mild smokiness became more pronounced as the beer warmed, adding an unexpected layer of complexity. Each sip invited more attention as the smoky flavors gently built on the palate. The Alderwood smoke brought a smooth, pleasant quality that harmonized beautifully with the roasted malt.

Alaskan Smoked Porter
Water:
Spring water with 4 grams of gypsum
Grains:
8.0 lbs (3.6 kg) Rahr American 2-row Malt
2.0 lbs (0.9 kg) Smoked Malt (Home Smoked)
1.0 lbs (0.45 kg) 60°L Crystal Malt
0.5 lbs (226 g) Pale Chocolate Malt
0.5 lbs (226 g) Black Patent Malt
Hops:
1.5 oz (42 g) Magnum hops, 16% AA. (60 minutes)
Yeast:
1 packet of CellarScience Cali American Ale Dry Yeast
Mash grains at 152° F (67° C). Boiled for 75 minutes, adding the hops so that they boil for 60 minutes
Fermented at 62°F (17°C) for a week then ramped it up to 70°F (21°C) until krausen dropped
Original Gravity: 1.065
FInal Gravity: 1.014
ABV: 6.7%
IBU: 45
