This is the Ultimate Nigerian Fried Rice Recipe! This step-by-step recipe is easy to follow and it's very delicious! It's authentic and it will be the star of your Nigerian Feast! Make sure you watch the video to the end as I have some drama for you! Enjoy.
Nigerian Fried Rice Recipe:
3 cups of rice. Wash the rice. Watch my how to cook white rice video.
Add the washed rice to a large pot
Add 1 cup of fresh green peas
Add some salt to taste
Add ½ teaspoon of fresh thyme
2 Tablespoons of curry powder
1 Teaspoon or one cube of veggie bouillon.
Add 3¼ cups of water and mix
Bring your rice to a boil,
then let it simmer for 12 to 15 mins depending on how soft you like it
Add some avocado or any cooking oil to a pan set to medium heat
Add 1 tablespoon of curry and stir. Don’t let it burn
Immediately add 5 grated cloves of garlic and grated thumb sized ginger
Add half a bulb of onion (diced)
Increase your heat to medium high heat
Add 1 cup of cut string beans
Add one cup of pre-cooked sweet corn
Add some sea salt
Add 1 tablespoon of veggie bouillon
Mix and let it cook on medium high heat for 2 mins
After 2 mins add the white part of 3 scallions (sliced)
Add 1 cup each of diced red and green bell peppers
Saute for 2 to 3 mins
Add 1 cup of diced carrots
Add your rice and green peas
Let it cook for 2-3 mins on medium high heat
Stir occasionally
Add some thinly sliced cabbage
Cook for 2-3 mins and you’re done.
