Ingredients:
500g Basa fish fillets, cut into chunks
2 cups basmati rice, soaked for 30 minutes
2 onions, thinly sliced
2 tomatoes, chopped
1/2 cup yogurt
2 tablespoons ginger-garlic paste
1 teaspoon turmeric powder
1 tablespoon biryani masala
1 teaspoon red chili powder
1/2 cup chopped cilantro (coriander) leaves
1/4 cup chopped mint leaves
4 tablespoons cooking oil
Salt to taste
For Layering:
Saffron strands soaked in 2 tablespoons warm milkFried onions (optional)Chopped cilantro (coriander) leavesChopped mint leaves
Instructions:
Heat oil in a large pan. Add sliced onions and sauté until golden brown. Remove half of the onions and set aside for layering.To the remaining onions in the pan, add ginger-garlic paste and sauté until fragrant.Add chopped tomatoes and cook until they turn mushy.Stir in turmeric powder, biryani masala, red chili powder, and salt. Cook for another 2 minutes.Add yogurt and mix well. Cook until oil starts to separate.Gently fold in the Basa fish chunks and cook for 5-7 minutes until the fish is partially cooked.In a separate pot, bring water to a boil. Add soaked rice and cook until it's 70% done. Drain the rice and set aside.Now, it's time to layer the biryani. In a large pot, spread a layer of partially cooked rice at the bottom.Spoon the cooked Basa fish mixture over the rice evenly.Sprinkle chopped cilantro (coriander) leaves and mint leaves.Repeat the layers until all the rice and fish mixture are used up, ending with a layer of rice on top.Drizzle the saffron milk over the rice. Top with fried onions, if using, and more chopped cilantro (coriander) leaves and mint leaves.Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes until the rice is fully cooked and fluffy.Once done, gently fluff up the rice with a fork and serve hot with raita or your favorite side dish.
