Turai Chutney Andhra Style | No Onion No Garlic Chutney Recipe
Ingredients:
Oil - 2 TBSP
Skinned Black Gram/ Urad Dal - 1 TSP
Yellow Split Peas/ Chana Dal - 1 TSP
Mustard Seeds/ Rai - 1/2 TSP
Dry Whole Red Chili - 2 To 3
Asafoetida/ Hing - 1/4 TSP
Green Chili - 1
Tomato - 1 Large
Ridge Gourd/ Turai/ Beerakai - 250 Gm
Turmeric Powder - 1/4 TSP
Salt - To Taste (Around 1 TSP)
Fresh Coriander - 1 to 2 TBSP
Method:
In a pan, heat oil. Add urad dal, chana dal & rai. Let rai splutter, then add hing and whole dry red chilies. Once the red chilies are roasted (takes around 10 seconds), take the red chilies out and keep them separate for later use. In the pan, add green chili and stir for about 10 seconds. Add tomato and ridge gourd and mix everything. Add turmeric powder, salt and 3 to 4 TBSP water. Mix everything well. Cover and cook till the tomato and ridge gourd pieces become soft. Will take about 8 to 10 minutes on low to medium flame. Stir a few times in between. Switch off the flame and keep covered for 5 minutes. Remove the lid and let the mixture cool down completely. Transfer it to a grinder jar once cool. Add fresh coriander and the roasted whole red chilies that we kept aside earlier. Coarsely grind (do not make a very smooth paste) and enjoy with idli/ dosa/ uttapam / rice or even roti if you like!
