Want to do something special and unforgettable for your mum this Mother’s Day? You could try cooking her this simple and delicious dish - Salmon Teriyaki and serve it with some steamed rice and greens on the side.
What you need: 🐟🍯
3 tablespoons vegetable oil
2 tablespoons soy sauce
3 tablespoons honey
1 teaspoon finely grated ginger
1 tablespoon mirin
2 tablespoons cooking sake or water
4 x 150g skinless salmon fillets
Steamed greens to serve (optional)
How to make: 👩🏻🍳🥣
Put the soy sauce, honey, ginger, mirin and sake in a small saucepan over high heat and bring to the boil. Reduce the heat to low and simmer, stirring for a minute, ensuring the honey does not burn. Set aside to cool.
Wash and pay dry the salmon and put the fillets in a shallow glass or ceramic dish. Pour over the marinade, turning the fish to ensure it is well coated with the mixture. Cover and transfer to the fridge and allow to marinate for 15minutes.
Heat the vegetable oil in a large non stick pan over high heat. Place the fish skin side down in the pan and cook for 3 minutes, gently pressing down with a large spatula so the fish does not curl up during the cooking process and to get a nice even crispy finish. Reduce the heat to low turn the fish over and cook for a further 3 minutes or until cooked through. Transfer the fish to serving plates.
Heat the reserved teriyaki marinade in a small saucepan over medium heat. Transfer the salmon to the plates and pour over the teriyaki sauce. Serve hot with steamed greens on the side.
