Turnovers are a sweet Barbadian treat! its a bun filled with deliciously sweet coconut filling and baked to a nice golden brown, the aroma of these coconut filled buns, fills the air with such a sweet smell, you can hardly wait for them to be ready.
Recipe calls for
DOUGH:
2¾ cups all-purpose flour
½ teaspoon salt
1/2 cup cold unsalted butter, cut into small cubes
¼ cup sugar
4 teaspoons active dry yeast
1 cup warm milk, approx (110-115 degrees F)
FILLING:
2 cups grated coconut,
¾ cup granulated sugar
1/2 teaspoon ground cinnamon
1 teaspoon almond extract
TOPPINGS:
Sugar water (1 tbs brown sugar mix with 1 tbs water)
INSTRUCTION:
In a separate bowl, mix the sugar, yeast and milk Let sit for 10 minutes for the yeast to activate.
In a separate bowl, sift the flour and salt, then incorporate the cubes of butter until you have a breadcrumb-like consistency.
Pour your yeast mixture with your flour and beat or mix for 5 minutes. Your dough should be sticky, but not sticky enough to stick on your fingers when touching.
Place the dough in a lightly oiled bowl, cover, leave somewhere warm and let rise for about 1 hour (the dough should double in size).
Combine the filling ingredients in a bowl, stirring well so that the sugar begins to dissolve and the mixture is moist. Set aside.
Once the dough is done rising, punch down the risen dough and cut the dough into 10 equal pieces.
Roll each piece of dough into a 3-4 inch oval.
Spread the filling 1/2 inch shy of the edges. fold the two edges ( left and right side) in about 1/2 inch (refer to video). Then start rolling it in until it forms a log. place it inside of a greased loaf pan, or parchment-lined baking sheet, seam-side down. Leave about 1/4 of an inch between each roll. so that they have room to rise once all have been filled and rolled, cover and let rise for 30 minutes.
Preheated oven to 350 F while there are rising.
Brush your rolls with sugar water, sprinkle with brown sugar, bake for 15 minutes. After 15 minutes, remove from oven and baste with the sugar'-water again.
Bake for another 5 minutes or until they are golden brown.
Remove from the oven and cool on racks for 15 minutes.
