WHITE DHOKLA
Ingredients
1 cup rice
½ cup split skinless black gram (urad dal), soaked and drained
¼ cup yogurt
Oil for greasing
¼ cup grated cabbage
1-2 tablespoons grated carrot
1-2 tablespoons corn kernels
2 teaspoons ginger-green chilli paste
Salt to taste
1 teaspoon fruit salt
1 teaspoon lemon juice
Black pepper powder to taste
Roasted cumin (jeera) powder for sprinkling
Red chilli powder for sprinkling
Fresh mint sprigs for garnishing
Coriander chutney for serving
Method
1. To make the batter, blend together rice and black gram. Add yogurt, stir and leave it to rest overnight.
2. Heat sufficient water in a steamer and bring to a boil. Grease a steel plate with some oil.
3. Add cabbage, carrot, corn kernels, ginger-green chilli paste and salt to the batter and mix well.
4. Mix together fruit salt and lemon juice in another bowl, add to the batter and mix well. Pour the batter on the greased plate.
5. Place the plate in the steamer, cover and steam for 10-12 minutes or till fully done.
6. Remove lid, sprinkle pepper powder, cumin powder and chilli powder on top. Cut into squares, garnish with mint sprigs and serve hot with coriander chutney.
