Helloo my beautiful viewers! It's Friday and ya know what that means! It's time for another video from yours truely. I must say I've been extra obsessed with soups/stews this fall (more than I usually am) Idk if it’s the colder weather here in Colorado or what but all I want is soup! Anywho, I decided to make a tomato bisque very similar to one I used to make back in the day when I worked at Zoe’s kitchen. It wasn’t vegan but ya girl made it vegan! Not only did I veganize it, I topped it with grilled cheese croutons!!! 🙌🏽 oh yeah! I hope you make this one FORREAL!!
Ingredients
3-4 Tbsp oil
4 medium carrots (peeled and diced)
1 medium onion (diced)
1 Tbsp dried basil leaves
1 quart vegan "chicken" broth or vegetable broth
3 28oz cans whole peeled roma tomatoes
1-1.5 C Vegan half and half or "cream"
S+P to taste
for grilled cheese croutons
4 slices of bread
1 Tbsp vegan butter
4 slices of vegan cheddar cheese
*fresh basil leaves for topping (optional)
