This is the cake that made me fall in love with chocolate cakes! It’s super moist (thank you zucchini), extra chocolatey and just the right amount of sweet. Even people who claim not to like squash LOVE this cake because they don’t even realize it’s in there!
The recipe was inspired by a cake I had back in college when I was a photo assistant, and I think you’ll be just as shocked as I was that it’s full vegetables. It’s been one of my favorites ever since. And it’s one of my most popular summer recipes.
