Ariselu or Arisa is an Indian sweet from Andhra Pradesh, Odisha, Telangana. It is also called Kajjaya in Kannada, Adhirasam in Tamil Nadu, Neyyappam in Kerala, Anarsa in Marathi, Arsa or Anarsa in Uttarakhand, Bihar and Jharkhand.
Recipe:
Flour:
1. Soak the rice (2kg) overnight.
2. Rinse for 2 to 3 times and drain out the water.
3. Dry the rice on dry cloth for 30 minutes.
4. Grind the rice in batches into a very fine flour, sieve it and keep aside.
Jaggery Syrup:
1. Put jaggery (1.5kg) in a pan and add 50 ml water.
2. Boil until the syrup starts bubbling. When the syrup starts to bubble, take a small spoonful of syrup and put it in a small cup of water. If the syrup doesn't dissolve or if it turns into a ball when pressed with fingers then the syrup is ready.
3. Add 4 tsp ghee, 1 tsp cardamom powder, 2 tsp sesame seeds and mix well.
4. Turn off the flame and keep it aside.
Preparation:
1. Add the rice flour little by little to the jaggery syrup. Keep stirring and keep adding the rice flour until the dough turns hard like dough looser than chapati dough.
2. Heat oil for deep-frying on a medium flame.
3. Take a plastic sheet or banana leaf, grease your fingers and the sheet with ghee.
4. Take a fistful of dough and make it into a round ball. Pat it into a round flat shape.
5. Drop it into oil carefully and fry for a while and flip it over to the other side. Fry until it turns to a nice golden brown color. (Fry one by one, so that it will not stick to each other)
6. Take out the Adhirasam from oil and press it hard with two turner spoons until all the excess oil comes out.
7. Tada! Our delicious adhirasam is ready to serve.
