This is a dish that we particularly loved cooking and eating because it goes back to the roots of the classic Emilia Romagna trattorias on those foggy but joyful nights full of friendship, love and amazing food (at cheap prices).
This creamy sausage ragù is the most common sauces you find in those places, Gramigna is the pasta shape traditionally used for this sauce, but also the Garganelli are perfect and very common.
What you drink with this food? Well, it's very easy to pair: those trattoria hosts don't even take the order for wine, they just drop bottles of Lambrusco on the table one after the other.
