INGREDIENTS
Ginger Simple Syrup
1 large thumb ginger peeled and sliced (about 1 ounce/30g)
1/4 cup (60ml) maple syrup
2 tablespoons (30ml) water
Green Tea
8 cups (1920ml) hot water
3 bags peach green tea
Other
10 leaves fresh mint
1/2 peach chopped (about 2 ounces/55g)
Ice to preference
INSTRUCTIONS
In a small pot add the ingredients for the ginger simple syrup. Mix together. Allow them to come to a simmer over low heat, once simmering continue to let it simmer for 5 to 7 minutes. It will be bubbly and thickened. Turn off and remove the ginger pieces, set aside and save for later.
In a large heat resistant pitcher add the water, tea bags, and simple syrup. Mix with a large spoon. Let tea steep for 3 to 5 minutes and then remove the bags, until it is golden color.
Allow tea to cool down, I like to start to add ice cubes in now to help speed the process up. Once it is room temperature add in the ginger, chopped peach, and fresh mint.
Now, you can continue to add ice cubes until it is cold or you can place in the fridge until ready to serve.
Add ice cubes into a glass, pour in tea then scoop in a few pieces of peach and ginger.
