The traditional recipe for the Danish Christmas butter cookies "Klejner". This recipe is more than 40 years old so you can without a doubt in your heart try it out - it succeeds! ;-)
Ingredients for 100 klejner:
3 eggs
150 gr white sugar
150 gr softened butter (salted preferably)
1/4 - 1/2 tsp cardamom
1 organix lemon, the zest
3 tbsp cream (full fat 38%)
500 gr all-purpose flour
500 gr coconut fat / palmin (can be substituted by neutral tasting frying oil)
Fry the klejner for 1 - 1.5 minutes on each side in the hot frying oil.
