GARLICKY MUSHROOM PAKORAS
Ingredients
1½ tbsps garlic paste
16-20 button mushrooms
Oil to deep fry
1½ cups gram flour (besan)
¼ tsp carom seeds (ajwain)
1 tsp red chilli powder
A pinch baking soda
Salt to taste
1 lemon
Method
1. Heat sufficient oil in a kadai.
2. Trim the stems of the mushrooms and place them in a bowl.
3. For the batter combine gram flour, carom seeds, red chilli powder, baking soda, salt, garlic paste and sufficient water in a bowl and whisk till smooth. The consistency of the batter must be thick enough to coat. Add juice of lemon and mix well.
4. Dip each mushroom in the batter and slide into the hot oil. Deep fry on high heat till golden and crisp.
5. Drain on absorbent paper and serve hot.
