This video demonstrates how to change the default look of LibreOffice by using toolbars, colors and icon sets.

You can change the default/standard icons and visualization in the toolbar of LibreOffice from the available set of icon themes and toolbar's colors.
And you can also change the user interface from the View menu. These are called "Notebookbar".

In this video I used LibreOffice 6.4 version, but these instructions work well on every version you have.
