Blueberry Jalapeno Meatballs
Ingredients
32 oz. bag of frozen meatballs
1 ½ cup of frozen blueberries
3-4 jalapenos
¼ cup sugar substitute (stevia)
⅛ cup sugar free BBQ sauce
2 tbsp. lemon juice
Add the meatballs to the air fryer cook on air fry mode 390 for 20 mins. Open the basket to shake the meatballs every 5 mins. Remove once finished cooking. To a sauce pan add in the blueberries and chopped jalapenos cook on medium heat for 2-3 mins stirring constantly once the blueberries open and start to release there juices add in the lemon juice and sugar free BBQ sauce. Mix until the sugar has dissolved and cook for another minute to let the sauce reduce down to your desired consistency. Pour the sauce over the cooked meatballs and enjoy.
