A popular fusion recipe of bhel made using crispy deep fried noodles.
CHINESE BHEL
Ingredients
2 cups boiled noodles
Oil for deep-frying
1 tablespoon schezwan sauce
1 tablespoon tomato ketchup
3-4 spring onion bulbs, sliced
1-2 stalks spring onion greens, diagonally sliced+ for garnishing
2 tablespoons roasted coarsely crushed peanuts
Salt to taste
¼ cup bean sprouts
Method
1. Heat sufficient oil in a pan. Deep-fry noodles till golden and crisp. Drain on absorbent paper and cool.
2. Combine crushed fried noodles, schezwan sauce and tomato ketchup in a bowl and mix. Add spring onion bulbs, spring onion greens, roasted peanuts and salt and mix. Add bean sprouts and mix well.
3. Serve immediately garnished with spring onion greens.
