Welcome to a new episode! Today we take a trip to Spain as we recreate a famous and traditional Spanish dish: the Segovian Roasted Suckling Pig, also known as “Cochinillo Asado”. This dish can only be done with a Suckling Pig, which is a piglet that has been slaughtered within two to six weeks of being born and is usually smaller than 10lbs, ultimately this is the most amazing pork you’ve ever tried, soft and tender it can be cut with a plate.
I seasoned the Suckling Pig and prepared its skin so we can get that tender and succulent meat, but also a crazy crispy skin. At the same time we will be roasting some potatoes that will deliciously cook with the pig’s fat. The pig takes around three hours to cook, so make sure to kick back and relax as we are about to give you the tastiest ride of your life.
