We started a bottle of vanilla extract on Monday, September 16. By Friday, September 20, it was already getting dark and looking a lot more vanilla-like than rum-like! We'll still give it several months to a year before tasting, but the extract grade vanilla beans from the Indri's Vanilla Bean Group order nicknamed "Edelweiss" definitely pack a punch of flavor. They may look a little worse for wear, but they've got it where it counts.
