Idiyappam is a few ingredient recipe with the key ingredient being rice flour. If you want to make the recipe the authentic way, you will have to start with raw rice. The rice would be soaked in water until soft and then fan dried to the right moisture level. Then grind the rice into a smooth flour.Then use this freshly made rice flour to make idiyappams and the taste would be just awesome.
Ingredients required:
Rice Flour - 1.5 Cup
Water - 2 cups
Ghee - 1 tsp
Salt - as per taste
Follow some instructions:
firstly, in a kadai take 2 cup of water.
also add salt and ghee.
stir well and get water to boil
further slow the flame, and add rice flour.
mix continuously.
now turn off the flame, cover and rest for 5 minutes.
Next with wet hands, knead and combine together.
be careful, as the dough is going to be very hot.
now take sev mould and fix to the maker.
grease the sev maker with some oil. this prevents dough from sticking to mould.
now make a cylindrical shape out of dough and place the dough inside maker. keep covered the rest dough else they will turn hard.
tighten the lid and start preparing idiyappam.
on the greased idli plate press in circular motion.
further, steam it for 8 minutes.
finally, serve idiyappam with channa curry, tomato kurma or sweet coconut milk.
