Cotechino with lentils is a typical Italian dish eaten on Christmas and especially on New Year 's : Tradition has it that eating a portion or more of cotechino(Italian sausage before midnight or the day or new year is a good omen for the new year.
It's said to bring you luck and money.
Cotechino was born as a poor dish that the peasants usually ate with legume soups and minestrone. Typical product of Emilia-Modena, cotechino was once prepared exclusively by the "lardaroli" and the "salsicciari", the former "beccai" (butchers), who only came together in an autonomous guild from 1547.
In reality, however , the first mention of cotechino is made only two hundred years later, in 1745, in a calmiere and the first recipe appears the following year.
The importance that cotechino has assumed today is due to the father of Italian cuisine Pellegrino Artusi who, in his immense work, "Science in the kitchen and the art of eating well", speaks of the famous "cotechino fasciato".
