Quality wines are often more intense in both smell and taste, with longer finishes. You're more likely to experience rich aromas jumping from the glass to your nose, and taste pronounced flavors with every sip. In premium expressions, a finish can even be up to several minutes long.
Add lemon to balance the acidity and brighten the flavor of dull wines. Just squeeze the juice from a lemon wedge into your glass and give it a quick stir. Let it sit for a minute before you take another sip and voilà! You'll have a crisper, more refreshing wine. In a sample of more than 6,000 blind tastings, we find that the correlation between price and overall rating is small and negative, suggesting that individuals [without wine training] on average enjoy more expensive wines slightly less.
