This is a video showing how to cook Tacos Al Pastor on the Kamado Joe Classic II. This is a classic street taco recipe that will be a crowd pleaser and eye catcher.
Tacos Al Pastor Recipe:
1 4 pound Pork Shoulder
3 tablespoons Achiote Paste
2 tablespoons of Guajillo Chili Powder
1 tablespoon Garlic Powder
1 tablespoon Dried Oregano
1 tablespoon Cumin
1 tablespoon Salt
1 tablespoon Pepper
3/4 cup White Vinegar
1 cup Pineapple Juice
*Marinade overnight
Instructions:
1. Bring Grill up to 300 degrees
2. Cook until 175 and rest for 20 minutes. Some recipes take internal temp to 200. I think it's based on how much char / crunch you like.
3. Slice from top down and plate with cilantro, pineapple, chopped onions and drizzle with lime.
4. Another thing: After slicing all the way around. I torched each section after cutting meat for each round to get the char for each layer. If you don't have a culinary torch, just bring temp up on grill allow it to cook outside.
