Portuguese-style Crème Brûlée Recipe:
Ingredients
1000 g milk
6 egg yolks, from medium eggs
200 g sugar
40 g cornflour
or 60 g plain flour
3 pieces lemon peel, without white pith
brown sugar, for serving
Preparation
1. Place milk, egg yolks, sugar and cornflour in mixing bowl, then mix 15 sec/speed 3.5.
2. Add lemon peel and cook 12 min/90°C/speed 2.5. Transfer to serving dish or individual bowls and leave to cool. Just before serving, sprinkle with brown sugar and caramelise with a cook's blowtorch. Serve immediately.
