Ingredients: for 4 to 5 servings
Mutton with bones (big pieces): 250 grams
Onion: 1 big measuring about 100 grams
Tomato: 1 big measuring about 100 grams
Garlic cloves (medium sized): 6
Mint leaves: 1 tablespoon
Coriander (dhaniya) powder: ½ teaspoon
Cumin (zeera) powder: ½ teaspoon
Black pepper powder: ½ teaspoon
Clarified butter (pure ghee): 1 ½ tablespoon
Turmeric powder: 1/4th teaspoon
Red chilli powder: 1 teaspoon
Spices (garam masala powder): ½ teaspoon
Salt: 2 teaspoons
Peppercorns (sabith kali mirch): ½ teaspoon
Chopped coriander: a handful
Water: 750 ml
Procedure:
1. To an empty bowl, add chopped tomato, add sliced onion, peeled garlic cloves, mint leaves, coriander or dhaniya powder, cumin or zeera powder and black pepper powder.
2. Grind all these into a fine paste and keep aside.
3. To a cooking pan, add clarified butter or pure ghee.
4. Add the ground paste. Add turmeric powder.
5. Stir fry for one minute.
6. Add washed and drained mutton pieces.
7. Add red chilli powder and spices or garam masala powder.
8. Stir fry till the oil separates.
9. Add 750 ml of water. Add salt. If you want spicy, add peppercorns.
10. Cook on low flame till the mutton gets very tender.
11. Switch off the flame. Add chopped coriander. Mix well.
Mutton Clear Soup is ready.
