INGREDIENTS:
* Bitter Guard(करेला) - 5 Pieces
* Bitter Guard Seeds(करेले के बीज)
* Bitter Guard Peels(करेले के छिलके)
* Oil(तेल) - 1-2 Spoon
* Roasted Gram(भुने चने) - 3 Spoon
* Crushed Red Chilli Powder(कुटी हुई लाल मिर्च) - 1/2 Spoon
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Turmeric Powder(हल्दी पाउडर) - 1/2 Spoon
* Coriander Powder(धनिया पाउडर) - 2 Spoon
* Roasted Cumin Powder(भुना जीरा पाउडर) - 1 Spoon
* Asafoetida/Hing Powder(हींग पाउडर) - 2 Pinch
* Salt(नमक) - As per taste
* Fennel Powder(सौंफ पाउडर) - 2 Spoon
* Raw Mango(कच्चा आम/कैरी) - 1
* Coriander Leaves(धनिया पत्ती)
* Oil(तेल) - 2 Spoon
RECIPE:
For Masala, take a grinder, put some, Roasted Gram, Crushed Red Chilli Powder, Kashmiri Red Chili Powder, Turmeric Powder, Coriander Powder, Roasted Cumin Powder, Asafoetida/Hing Powder, Salt, Fennel Powder & grind them all.
For Karela, take out Bitter Gourd peel and make a cut in between, separate all Bitter Gourd seeds from it. Then put some Salt & Turmeric Powder, mix & keep it for half an hour. Wash them & drain out the Water from Bitter Gourd.
For Filling, take Bitter Gourd Peels & wash them properly with Water & squeeze all the Water from them. Then keep the pan on the flame, put Bitter Gourd Peels & Seeds & roast them. Then add grated Raw Mango/Kairi, ground Masala Powder, Coriander Leaves & cook well & keep it for cooling down. Then fill the filling in Bitter Gourd & cut the Bitter Gord ends. In a pan, put some Water for boiling, keep a strainer plate on it and grease it with Oil. Put the ready stuffed Bitter Gourd on the plate then cover it and give them steam for 20 mins. Then roast the steamed Bitter Gourd/Karele in the heated Oil. Now Bitter Gourd/Karela Sabji is ready to serve.
