This is my version of one of my all-time favourite dishes 3 cup CHICKEN TAIWANESE chicken BASIL stir fry. Amazing after living in Asia for 20 yrs there is a real cross over of recipes from different countries around the region this 3 cup CHICKEN TAIWANESE chicken BASIL stir fry is not exception - very similar to the Thai Chicken and ginger stir fry with the inclusion of Thai basil - this is a real easy dish to make and one of those tastiest dishes that go unnoticed.

Ingredients
800g chicken thighs, cut into bite-sized pieces
1 tbsp sesame oil
2 inch piece ginger, peeled and finely julienned
10 garlic cloves, thick sliced or halved
4 large dried red chillies, cut into bite-sized pieces
1 tbsp cornflour (cornstarch) mixed 2 tbsp water (slurry)
½ cup Thai basil leaves - use basil leaves if no Thai basil

Stir-fry sauce:
3 tbsp Chinese Shaoxing wine
3 tbsp soy sauce
2 tsp dark soy sauce
2 tsp brown sugar

Note: steamed rice, to serve!
