INGREDIENTS:
• 2 long eggplants
• All-purpose flour, as needed
• Fine salt, as needed
• 1 liter of peanut oil for frying
INSTRUCTIONS:
Start by trimming the ends of the eggplants. Then, slice them into rounds about 2 mm thick.
Meanwhile, heat the peanut oil in a pot until it reaches a temperature of 180°C (350°F).
Dip the eggplant slices into the all-purpose flour, coating both sides evenly. Shake off excess flour.
Once the oil reaches the desired temperature, carefully place a few eggplant slices into the oil.
Use a frying ladle to turn the slices once they are golden brown on one side.
Allow them to brown on the other side as well, then remove and drain using the frying ladle.
Transfer the fried eggplant slices to a tray lined with paper towels to remove excess oil.
Season the slices with salt according to your taste.
Serve the fried eggplant chips while still hot.
