Uncle Scott's mom joins Uncle Scott's Kitchen to show us her official recipe for how to fry okra. Simple, easy, and delicious Southern fried goodness!

The Recipe

Take one to two pounds of cut okra (frozen okra works well...it's hard to find fresh) and if frozen, thaw it to room temp on a platter or plate.

Put 2-3 cups of corn meal into a bowl. Marth White corn meal works well. Avoid sweet corn muffin mixes and also avoid coarse grinds... finer grinds work better.

Sal and pepper the top layer of okra.

Drop a handful of the okra into the corn meal. Okra is slimy and sticky, and the corn meal will stick to it with no batter.

As you work through your okra, salt and pepper the next layer, and dredge it as well.

Work through your okra and let it rest on a platter.

Heat 1/4 to 3/8 inches of oil in a heavy cast iron skillet on medium to medium-high heat. If you don't have cast iron, carbon steel and stainless steel also work well.

Place a test piece of okra in the pan. Once it sizzles nicely spread a single layer of okra into the pan.

Let if fry for 2-3 minutes, turn it, 2-3 more minutes, turn it again, and then another 2-3 minutes until it's done.

Place the okra on a paper towel on a plate or let it rest on a wire rack.

Devour!
