This is a brief video to show you how easy fermenting cucumbers can be. Recipe and instructions are below.
Recipe:
- 2 pounds of Persian cucumbers or other types of pickling cucumbers.
- 5 cloves of garlic
- However many fresh dill
- Pinch of whole chili peppers
- A pinch of whole peppercorn (optional)
- Grape leaves (optional)
- 6 cups of water (filtered, or distilled bottled water)
- 3-4 tbsp sea salt (pickling salt, himalayan salt, or your own choice of salt.
Directions:
1. Wash and clean your choice of glass jar with warm water and soap. Place cucumbers, garlic, peppercorn, dill, red peppers flakes, and grape leaves (optional) in your glass jar.
2. Add room temperature distilled or filtered water and sea salt to a large glass bowl. Whisk until salt dissolves. Pour brine into the jar with cucumbers and added contents. Make sure the cucumbers stay below the brine. Sense I do not have the proper weights, i use a ziplock baggy filled with leftover brine to keep the contents submerged.
3. Let the cucumbers ferment at room temperature. After five days, taste your batch to see if it's to your liking, if not let it ferment longer until it has reached the desired taste.
