Red Bean Mooncake can be said to be quite a favorite among the many varieties of mooncakes we have.
Though cooking the paste takes some effort but it is a good effort. 1 good point for me is always you know what goes into the cooking. For me, home made is usually a little more effort and costly.
Since it is only once a year we prepare red bean mooncake, it is good to keep doing it for the tradition. Memories keeps flooding back of the childhood days. I smiled when I think of some good advises that was given by the elders. It does make you a better person.
By itself red is a color that represent good luck. Red bean is the most yang in the legume family. We mostly used it in sweet and savory preparation in our cuisine. So using red beans in paste, fillings, pancakes or ice cream, it does add a richer texture and goodness.
Let's get ready to make the red bean mooncake. 2 main things to get ready.
A. Making the Mooncake Skin Pastry
1. 400 grams Mooncake Golden Syrup
2. 1/2 tea spoon Baking Soda
3. 1 1/2 Table spoon Alkaline Water
4. 100 gram Fragrant Peanut Oil
In a bowl, add 1 to 4 and mix well. Rest 30 mins
5. 550 gram All purpose Flour (sieved)
After 30 mins, add flour and mix well. Cover and rest for 4 hours.
Make balls weighing 40 grams each.

B. Preparing the red bean paste fillings: (Approximately 20 to 22 pieces depending on weight used)
1. 600 grams Cooked Red beans paste
2. 40 grams Toasted Melon Seeds
3. 20 gram Toasted Sunflower Seeds (Optional)
4. 40 grams Chopped Candied Winter melon
5. 40 grams Candied Orange or Tangerine Peel
6. 9 pieces Salted Egg Yolk
Mix well ingredients 1 to 5. Make into balls 80 grams each including 1 egg yolk. (Vegetarians, omit egg yolk. Weight is 80 grams)

After resting Mooncakes skin for 4 hours, let us finally MAKE the mooncake
You need
1. Rolling pin
2. Plastic Mat
3. Plastic sheet
4. Dusting flour
5. Mooncake molds (Wooden or plastic)
6. Baking Tray
Egg Wash
2 egg Yolks
1 Table spoon Water
Mix well. Use a thinner brush to paint on the surface of the skin.
Baking Oven
Preheat oven for 15 mins at 180 deg C or 350 deg F for 15 mins
1st Baking : 10 mins
Take it out to cool for 2 mins
Lightly egg wash using the tip on top of surface, without filling excess wash in the holes of the pastry. (Bubbles appear)
2nd Baking : 10 mins or till lightly brown.
Resting the Mooncake
After baking, it is good to rest them for at least days by turning it.
1st day, rest with the top up.
2nd day, gently turn it upside down. (If you are rough, it will break the skin)
3rd day, turn it back to the top.
Ready for sale or giveaways.
