Eggplant Calabrese - made the way our family in Calabria taught me. I am using Nonna's sauce for this because I know you like it but you do not need to use sauce. Here is the link:

Ingredients:
Eggplant: 1 per person as a rule (3 for this video)
Salt - have a lot ready for seasoning throughout
Pepper - 1 1/2 teaspoon fresh ground black pepper
Parsley - 1 bunch or 8-10 stems
Onion - 1/2 red onion chopped
Garlic - 3 cloves chopped
Eggs - 2
Provolone - .65 lb block cubed for this video
Breadcrumbs - 1 cup for this video
Parmigiano Reggiano and Pecorino mix - almost 1 cup for the stuffing mix and more ready to sprinkle on before baking
Bake:
Bake on 400 degrees (convection) for about 20 minutes covered, then about 5-10 minutes uncovered.
Agin, you don't need sauce. I used Nonna's sauce but its not needed!
