For the cake
6 large eggs, separated
¼ teaspoon cream of tartar (optional)
160g / 3/4 cup plus 1 tablespoon granulated sugar, divided in method
2 teaspoon vanilla bean paste
1/4 teaspoon fine sea salt
125g / 1 cup all purpose flour
½ teaspoon baking powder
When you have success baking a well structured sponge cake, create your own flavors to your 3 milks mixture such as honey lavender, chai tea, matcha etc...

For the Earl Grey steeping milk mixture
220 ml / 3/4 cup plus 2 tablespoons full-fat milk
2 Earl grey tea bags or 2 Tablespoons Earl grey tea leaves, a lot more if like stronger flavor ( create any flavor you like that make you happy 😊)
12 oz can evaporated milk
280g ( 9.5oz ) or use whole 1x14oz condensed milk ( if preferred sweeter)
For the cream topping
240ml / 1 cup heavy cream, cold
1 teaspoon vanilla bean paste
1 tablespoon honey
Because most people scoop flour differently, I highly encourage the use of a digital scale when measuring ingredients to get consistent results, and I have provided weight measurements for that reason
Yogurt, sour cream, peanut butter, pumpkin purée, and the like are all examples of semi solids: ingredients that fall somewhere between a liquid and a solid. I always measure these types of ingredients in a liquid measuring cup, which gives a little more volume than a dry measuring cup because the cup is slightly bigger. If you are not using a scale to measure these ingredients, I highly recommend using a liquid measuring cup, so your baked goods will turn out correctly.
