INGREDIENTS:
¼ bag of Beyond Steak
1 flour or corn tortilla
¼ 12oz carton plant-based egg
½ tsp garlic powder
½ tsp smoked paprika
¼ cup plant-based Mexican cheese blend
1-2 tbsp plant-based Buffalo Sauce
¼ cup frozen potatoes
Salt and pepper to taste
PREPARATION:
1. Cook ¼ of a carton of egg substitute in a pan according to packaging instructions. As the egg cooks, add salt and pepper to taste and move the ‘scramble’ the mix as it cooks. Once fully cooked according to packaging instructions set aside and let cool.
2. As the egg cools, air fry your choice of breakfast potatoes (recommend frozen for convenience) until cooked fully according to packaging instructions.
3. Add Beyond Steak to a pan and cook according to packaging instructions. Season with garlic powder and smoked paprika. Adjust seasonings to your preference. Set aside.
4. Assemble the burrito, starting with the flour corn tortilla, and spread plant-based buffalo sauce and plant-based cheese on the bottom the center of wrap. Add potatoes, egg, and lastly a hearty scoop of cooked Beyond Steak. Wrap tightly.
5. Place the wrapped burrito on an air fryer basket and cook until the top begins to darken and the outside becomes crispy. About 5 minutes at 425 degrees. Remove from heat and let cool.
6. Serve hot with your choice of sauce.
