In this video Chris Creed demonstrates how to break down the front shoulder of a deer for processing.
You will need a sharp knife and a place to cut up your deer and that's it!
The first step is to trim all the silver skin and external fat from the shoulder so you can easily visualize the separate muscle groups. The front shoulder has a lot of connective tissue and fascia, but it is a tasty cut if processed properly.
Once the trimming is done, separate the meat from the bones. You can easily visualize where the joint space is and just cut the meat away.
